Pasta with Tomato Sauce

The weeknight classic. This recipe uses a cross-reference to pull in the sauce ingredients automatically.

Make the sauce.

Simple Tomato Sauce

A versatile base sauce. Make a double batch and freeze half for busy weeknights.

Cook the sauce.

  • Olive oil, 2 tbsp
  • Garlic, 3 cloves Minced.
  • Onion, 1 Finely diced.
  • Tomato passata, 680 g
  • Basil, a few leaves Torn.
  • Salt

Heat oil in a saucepan over medium heat. Cook garlic and onion until soft, about 5 minutes. Add passata, basil, and a pinch of salt. Simmer uncovered for 20 minutes, stirring occasionally, until slightly thickened.

Cook the pasta.

  • Spaghetti, 400 g
  • Salt
  • Parmesan Grated, for serving.

Bring a large pot of well-salted water to a boil. Cook spaghetti until al dente. Reserve a cup of pasta water before draining. Toss pasta with the sauce, adding a splash of pasta water to loosen if needed. Serve with grated parmesan.
